Quick Tamarind-Date Chutney is a super simple chutney that makes a great accompaniment to everything from curries to rice to veggie burgers. I spotted tamarind-date chutney on Veg Recipes of India and thought it looked delicious but I didn’t have the time to follow the recipe to so I came up with this easy no-cook variation. To make the chutney, simply blend all of the ingredients together in a food processor to firm a delightful sauce that’s the perfect mix of sweet, sour, and spicy. Quick Tamarind-Date Chutney may not prepared in the traditional method but it’s still quite delicious!
Quick Tamarind-Date Chutney
Gluten Free
Makes approximately 1/4 cup

Ingredients--
1/4 cup tamarind paste (you can try making it with premade tamarind paste concentrate in a jar but it won’t have as much flavor)
2 small medjool dates, pitted and roughly chopped
1.5 teaspoons agave nectar (or honey)
1 teaspoon water
1 teaspoon jalapeno, seeded and finely chopped (adjust according to heat preference)
1 teaspoon fresh ginger root, finely minced
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon granulated Truvia (or sugar)
1. Add all ingredients to a food processor or blender. Puree until smooth.
2. Store chutney in a glass jar in the refrigerator for up to 1 week.

Brussels Sprouts & Butternut Squash Curry
Turkey Curry Burger
Spinach & Oat Flatbread
Or on any other dish that needs a burst of flavor!
